Even better, sweet potatoes have numerous health benefits, including improved blood sugar regulation (helpful for diabetics), anti-inflammatory properties, and they’re packed full of vitamins and minerals. Likewise, maple syrup is a much healthier sweetener than any of the alternatives!
Check out the recipe below:
1 c mashed sweet potato
½ c smooth nut butter (we recommend almond)
2 tbsp maple syrup
¼ c cocoa powder
1.Preheat oven to 350ºF and grease small cake/loaf pan.
2.On the stove, melt nut butter with maple syrup.
3.In a large bowl, add the mashed sweet potato, melted nut butter and maple syrup, and cocoa powder and mix well.
4.Pour mixture into greased pan and bake for 20 minutes or until cooked through.
5.Remove from the oven and allow to cool completely before slicing and refrigerating.
6.These brownies are best when cooled completely. Store in fridge or freezer and ENJOY!
