Green Goddess Dressing & Breakfast Salad

Dressing
  1. 1/2 cup Earthbound Organic Kale Italia Blend
  2. 1 tsp lemon juice
  3. 1 tbsp apple cider vinegar
  4. 1 clove garlic
  5. 1/4 cup oil
  6. 2 tsp parsley
  7. 2 tsp raw honey
  8. 1 tbsp water
  9. 1 small chunk ginger
For the Breakfast Salad
  1. 4 slices nitrate-free bacon, cooked crispy
  2. 1 onion, sliced
  3. 2 cups Earthbound Organic Kale Italia Blend
  4. 2-4 soft boiled eggs
  5. 1 avocado, sliced
  6. 1 medium sweet potato*
Instructions
  1. Combine all dressing ingredients in your high-speed blender and blend until smooth
  2. Taste and adjust flavors as desired
  3. Assemble salad by making bacon in your cast iron skillet
  4. Once done, remove from heat and place sliced onions in the pan with bacon fat
  5. Saute for 10 minutes over medium-low heat until soft and caramelized
  6. Remove onions from pan and set aside
  7. Add chopped sweet potatoes into the same pan and cook for 8-10 minutes, I cover mid-way
  8. through to speed up cooking
  9. While cooking make your soft boiled eggs as described
  10. Assemble all salad ingredients, pour on dressing, and serve
